lemon and chamomile cookies

I have to admit that it turns out I don't like chamomile tea! I have been trying with different blends in hopes of gaining a liking for the tea. As a last attempt to use of my tea bags I made some cookies over the weekend, they were a hit so I will share the recipe for those who already enjoy chamomile.



Method:

Beat together softened butter/margarine {I pretty much melt mine} and sugar. Beat in the egg. Cut open the chamomile tea bags and mix into the egg/sugar mixture. Add the lemon extract. Combine flour, cream of tartar, baking soda and salt. Gradually add to butter mixture. The dough will come together quite nicely. Roll into balls a little smaller than a tablespoon. Roll into raw sugar {I have tried other sugars and raw gives it the best crunch and color so I definitely recommend this step}


In a 350 degree oven bake for 10 mins {they will look puffy and under baked, they will cool down and be great, don't over cook!} cool on a cooling rack.
