chocolate and earl grey cupcake : anna magazine

After posting about anna magazine last week it made me finally get around to testing out one the lovely recipes I had saved. I chose to try out earl grey and chocolate cupcakes. I am not usually a fan of cupcakes since you have to ice them pretty {or at least try to} I did switch up the recipe and halfed it so I will post what I did for mine. The original recipe can be found in issue 22 of anna.

What you need:
1/2 tablespoon of loose tea {I used the earls garden from davids tea}
1 cup boiling water
1/4 cup canola oil
1/2 cup cocoa
1/2 cup white sugar
1/4 cup brown sugar
1 egg
1 cup flour
1/2 teaspoon salt
1 1/4 teaspoons baking soda

How to make:
Add boiling water to loose tea and steep for 5 minutes. Strain tea leaves and add canola oil and cocoa to the tea {yes the full one cup of  tea} Whisk well and add in sugars, whisk and add in the egg and whisk some more. Add salt and baking soda mix and then add in the flour. Mix with a spoon until just combined. {my dough looked a little lumpy but the cupcakes turned out fine} Preheat oven to 350 degrees F. Fill muffin cups 3/4 full and bake for 20 mintues.

For the icing:
The orginal recipe calls for a chocolate ganache but I made a buttercream icing as follows
2 1/2 tabespoons soft butter {I melt mine}
1 1/2 tablespoons milk or cream
1 tsp vanilla {or more}
1/4 tsp lemon extract {not nessecary but I like lemon...}
1 1/2 cups icing sugar.

Mix all the ingredients together until smooth. I find microwaving the icing for 10 to 15 seconds after you have mixed it really smooths it out. Let cool off on the counter for a bit to harden back up.

Overall:
I really liked this recipe, the "cake" is very moist and flavourful which surprised me I have tried adding strong brewed tea to cake before with little to no flavour but this does taste like tea! I also love how my leopard print cupcake holders came out ombre from the chocolate.

  1. Sharing some friendly Winnipeg frugal-ness 'ere! Teaopia is turning into "Teavana", so they are cutting heaps of teas from their name.. and changing the packaging of the teas they'll be keeping. I'm stocking up as a lot of teas and other items are on clearance .. including Earl Grey! ;) xo
