tea and honey thumbprint cookies

I had guests over last week and decided it was a good time to play around with one of my favorite fool proof cookie recipes. Jam thumbprints, I enjoy making these since they require very little work and you really can't mess these up. I decided to add to tea {as usual} to the dough and add honey to the jam. The result was really tasty and sophisticated cookies.
What you will need:
11 3/4 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon fine salt
3/4 cup unsalted butter
2/3 cup sugar
1 large egg
1 teaspoon vanilla
1 or 2 bags of tea {cut open for the loose tea} I used jasmine green tea for these.
jam or your choice plus honey of your choice.

How to make:
* Whisk flour, baking powder, salt and tea in a bowl, set aside
*  In another bowl soften butter and whip butter and sugar with a hand held mixer till fluffy approx. 5 minutes {these makes them soft don't wuss out beat for 5 minutes} Beat in the egg and vanilla till just combined. Slowly beat in the dry ingredients in 2 additions mixing till incorporated. { I usually do this by hand....}
* Scoop the dough into 1 inch balls and place on cookies sheet. Press a "thumbprint" into the center of each cookies. I found the back of the 1/4 teaspoon worked just great. Fill each indentation with jam mixture.
Jam mixture:
I took a heaping spoonful of creamed honey plopped it in a microwave proof bowl and added a kitchen spoon of jam. Microwaved for about 10 seconds to warm it up and mixed well.  I think I could have used more honey so make it as you wish.

In a preheated 350 degrees F oven. Bake the cookies for 12-15 minutes. Or until lightly golden. Transfer to cooling rack and sprinkle with icing sugar when cooled.

I prefer these cookies the nest day the best store in an airtight container overnight and they will soften up to be extra tasty.
