office party treats

Tonight is my work holiday party (it is small only 5 of us) using food and the dollar store I think I ended up making some pretty presents! The super cute "made by:" tags can be downloaded via design sponge. 
Lavender and Earl Grey cookies
what you will need:
1 cup sugar, plus more for rolling
1/2 cup shortening (I used all butter)
1/2 butter, softened
1/2 tablespoon crushed lavender (I ran mine through a coffee grinder)
1 cut open earl grey tea bag (or if you have loose tea grind it up with the lavender)
1 egg
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar

How to make:
  • Grind up lavender and tea and set aside.
  • Combine sugar, shortening and butter, beat until light and fluffy. Add egg and lavender and tea mix well. Add flour, baking soda and cream of tartar mixing well. 
  • Shape dough into 1 inch balls and roll balls in sugar. Place 2 inches apart on ungreased cookie sheet and flatten with a glass or cookie press. Try to get cookies to 1/8 inch thickness
  • Bake at 350 degrees fahrenheit for 7 mins to start. Just until edges start to lightly brown. Cool for a minute and remove from cookies sheet.
Coffee Filling
 I used this recipe as the sandwich cookie.
what you will need:
1/4 cup butter softened almost melted if you like
3/4 cup icing sugar
1 tablespoon instant espresso powder

How to make:
Soften the butter add the espresso powder and let dissolve then mix in the icing sugar. If icing is too runny or soft cool in the fridge for awhile until spreading consistency.
