coffee crisp chocolate chip cookies

I winged this recipe over the weekend and they turned out pretty good! If you like cookies and coffee crisp bites this recipe will be for you. I am already planning a second batch for a friend. These can be converted to be gluten and egg free but sadly not dairy because of the coffee crisp.

what you will need: (makes 24 cookies)
1/2 cup butter or margerine, softended
1/2 cup packed brown sugar
1/4 cup sugar
1 egg (or egg replacer of your choice)
1 tsp vanilla
1 cup flour (or gluten free mix)
1/2 tsp baking soda
1/2 tsp salt
bag of coffee crisp bites to make minimum 1/2 cup crushed up bits add more to your liking.
1/3 cup chocolate chips

how to make:
Cream together butter and sugars. Add in egg and vanilla and beat well. Gradually add in flour, baking soda and salt until combined. Add in your chocolate chips and broken up coffee crisp bits**. Drop by tablespoon cookie scoop onto an un-greased baking sheet.

** Take a handful or two of coffee crisp bites and place into a plastic bag, smash them up a bit. Trying not to have many big chunks and without to much powder. Place in a measuring cup to judge how much you have.

I tried mostly coffee crisp bites for the above cookies and although they were good more chocolate chips could have been used.

Preheat oven to 375 degree Fahrenheit. Bake for roughly 8 minutes or until just cooked and starting to brown at the edges.
